Ingredients
4 chicken breast, boneless
1/2 tsp. garlic powder
1/2 tsp. smoked paprika
1/2 tsp. onion powder
1/2 tsp. Mexican chili powder (regular chili powder will be fine too)
1/4 tsp. dried oregano
1/4 tsp. ground cumin
10 oz. can red enchilada sauce
7 flour tortillas
1 1/2 C. shredded cheddar cheese
Instructions
Boil the chicken breast until cooked through, drain and allow the meat to cool long enough to be able to shred it. Add the seasonings to the shredded chicken and combine well. Add 3 T. of the enchilada sauce to the chicken and toss to coat. Divide the mixture between the tortillas and roll up, placing them in a 9x13" baking dish lined with tinfoil (easier clean-up). Top with the remaining enchilada sauce and then add the cheese. Cover with tinfoil and bake in a 350 degree oven for 35 minutes.
