"Cheetos" Meatloaf


1 1/4 C. crushed cheetos (don't over do it)
8 buttery round crackers, crushed
1/2 C. milk
2 lbs. ground beef
2 large eggs
1 slice of bread, torn
1/3 C. finely chopped onion
2 T. ketchup
1 tsp. worcestershire sauce
1 tsp. stone ground mustard
1/2 tsp. garlic salt
1/2 tsp. pepper
1/4 tsp. smoked paprika


Put the crushed cheetos, crackers and milk in a bowl, stir and let sit for 5 minutes. Meanwhile mix everything else together in a bowl, use you hands it works so much better. Add the cheetos mixture and combine well. Take some heavy duty tinfoil, larger than your loaf pan, and fold it up to where it fits in the bottom but hangs over the edge so you can lift the meatloaf out once done. Shape the meat into a loaf and press into your loaf pan. Bake in a 375 degree oven for 40 minutes. Meanwhile make the topping: Stir together 3 T. ketchup, 1 tsp. stone ground mustard and 1 tsp. honey. Brush over the meatloaf after baking 40 minutes and return to the oven for 15 minutes. Top with 1/4 C. shredded cheddar cheese and bake for 5 more minutes.
