Homemade Hamburger Buns

Ingredients

1 C. warm tap water

1 T. sugar

1 T. active dry yeast

1 large egg

2 T. unsalted butter, room temp.

3/4 tsp. salt

2 1/2 - 3 C. all purpose flour

Egg wash

1 egg

1 T. water

sesame seeds, optional for topping

Instructions

In a bowl add the water, sugar and yeast.  Stir to dissolve the sugar and yeast and let sit 4-6 minutes to proof (get foamy).  Mix in the egg and butter.  Add 1 C. of the flour and the salt, stirring to incorporate the flour, adding additional flour, 1/2 C. at a time to get a soft dough, not too sticky, just slightly sticky to the touch (humidity will play a role in the amount of flour).  Turn out onto a lightly floured surface and knead the dough for 2 minutes.  Shape into a ball and place in an oiled bowl, turning the dough ball to coat in the oil.  Cover with plastic wrap and a clean towel and let rise till doubled in size, about an hour.  Turn the dough back out onto the floured surface and divide it into 8 equal portions.  Shape each portion into a round and place on a baking sheet lined with a silpat or parchment paper.  Slightly flatten the top of the dough with your fingers.  Cover with the towel and let rise for 45 minutes.  Whisk together the egg and water for the egg wash and lightly brush the buns all over.  Sprinkle with sesame seeds if using.  Bake in a 350 degree oven for 18-20 minutes.  Allow the buns to cool before slicing.

Enjoy!!!
