Ingredients
3 lb. whole pork loin roast
1 tsp. olive oil
my all purpose seasoning (2 T. smoked paprika, 1 T. brown sugar, 1 T. salt, 1 T. Adobo seasoning, 1 tsp. pepper...combine and store in an airtight container)
Glaze
5 T. butter
3 T. honey
2 tsp. stone ground mustard
1 large clove garlic, minced
couple good shakes hot sauce
Instructions
Place the pork loin on a baking sheet lined with 2 big sheets of tinfoil. Rub the roast with the olive oil then season all over with a little all purpose seasoning. Use one sheet of tinfoil to wrap the pork loin. Bake in a 375 degree oven for 45 minutes. Meanwhile make the glaze by adding all ingredients to a small pot and heat over low heat till butter is melted and ingredients are combined. Remove the roast and uncover, drain off any liquid that's accumulated while baking. Brush with half of the glaze and bake, uncovered, an additional 15-20 minutes till internal temp. is 155 degrees. Remove and brush with remaining glaze, allowing the roast to rest for 10 minutes before slicing.
