Ingredients
5 lb. whole chicken
1/2 of a fresh lemon
couple of sprigs of fresh rosemary
2 T. butter
salt
pepper
cajun seasoning
Instructions
Pat the skin of the chicken dry. Place the lemon and rosemary in the cavity of the chicken (remove any gizzard or liver that might be in there). Use your fingers to loosen the skin from the chicken and pinch off pieces of butter and tuck as far back as you can go underneath that skin all over the chicken. Season underneath the skin with a little salt, pepper and cajun seasoning as well. Then give a generous seasoning of the same all over the outside of the chicken. Cover the tips of the wings with some tinfoil to keep them from burning and place the chicken on a cooling rack set over a baking sheet lined with tinfoil. Bake in a 425 degree oven for 20 minutes, without opening the door, reduce the heat to 350 degrees and roast for 1 hour and 15 minutes. The internal temp. should read 165 degrees. Allow the chicken to rest for 10 minutes before carving.
