Venison Meatloaf


4 slices loaf bread
1 lb. ground venison
1 lb. ground beef (80/20 blend)
2 large eggs, lightly beaten
1 pkt. onion soup mix
3 T. chili sauce
1 T. worcestershire sauce
1 tsp. smoke paprika
1 tsp. garlic powder
1/2 tsp. pepper
1 C. plain breadcrumbs


Place the 4 slices of bread, about an inch apart, in the center of a 9x13 baking dish. Combine the remaining ingredients in a bowl, don't overwork it, just gently combine. Shape the meatloaf in a rectangle or oval, 2" thick over the bread slices. Bake in a 375 degree oven for 30 minutes. Meanwhile make the topping.

Combine 1/2 C. chili sauce, 2 T. brown sugar and 1 T. worcestershire sauce.

After 30 minutes of baking remove the meatloaf and spread the topping all over it. Return to the oven for an additional 25 minutes.
