Yummy Cinnamon Rolls


3/4 C. warm milk ,110 degrees (microwave for about 1 minute)
2 1/4 tsp. instant yeast (active dry will work also)
1/4 C. sugar
1 large egg plus 1 egg yolk, room temp.
1/4 C. unsalted butter, melted
3 C. bread flour
3/4 tsp. salt

1/2 C. unsalted butter, room temp.
3/4 C. dark brown sugar
2 T. ground cinnamon

4 oz. cream cheese, room temp.
3 T. unsalted butter, room temp.
3/4 C. powdered sugar
1/2 tsp. vanilla extract


Place the milk and yeast in a large bowl. Let sit till it begins to foam up, about 5-6 minutes. Stir in the sugar, eggs and butter combining well. Stir in the flour and salt, continue to form the dough then turn out onto a well floured surface and knead for 10 minutes. Place the dough in a bowl greased with a little vegetable oil, cover with plastic wrap and let sit till doubled, about 1 hour. Turn back out onto the floured surface and roll into a 9x14 rectangle. Spread the butter for the filling over the dough then sprinkle over the sugar and cinnamon. Roll up and cut the dough into 1 1/2" slices. Place the rolls in a 9x9 baking sheet lined with parchment paper. Let sit for 30 minutes. Bake them in a 350 degree oven for 20-25 minutes, just until they begin to get a light golden color on top. Remove and use the parchment paper to lift them from the pan, let them cool for 10 minutes. Prepare the frosting by creaming all the ingredients together and frost after they have slightly cooled.
