Baked Three Cheese Mac & Cheese


3 C. dry elbow macaroni
1 tsp. salt
4 T. salted butter
8 oz. extra sharp cheddar cheese, grated
8 oz. sharp white cheddar cheese, grated
8 oz. gouda cheese, grated
2, 12 oz. cans evaporated milk
1/3 C. half & half
2 large eggs
1/4 tsp. garlic powder
1/4 tsp. pepper
smoked paprika


Bring a large pot of water to a boil, add the macaroni and salt and cook just until al dente then drain well. Add the macaroni back to the pot and stir in the butter until melted. Combine all 3 cheeses, set aside. Whisk together the evaporated milk, half & half, eggs, garlic powder and pepper. Add the whisked mixture to the macaroni along with all but 2 C. of the cheese. Stir to combine well and pour into a greased 9x13 baking dish. Top with the remaining cheese and then give it a generous sprinkling of the smoked paprika. Bake in a 375 degree oven for 25-30 minutes. Allow it to sit for 5 minutes before serving.
