Ingredients
3-4 salmon filet's
1 T. olive oil
4 T. butter
2 cloves garlic, minced
1 T. cajun seasoning
1/4 tsp. garlic powder
2 tsp. honey
Instructions
Heat the olive oil and 1 T. butter in a cast iron skillet over med. high heat. Add the salmon, skin side down and let cook for 4 minutes. Meanwhile, melt the remaining butter and whisk in the remaining ingredients. Baste the salmon with a little of the butter mixture and continue to cook for about 3 more minutes. Remove the salmon from the heat and baste the salmon with more of the butter mixture. Cover loosely with tinfoil and place in a 350 degree oven for 6 minutes. Remove and baste with the remaining butter mixture, cover and return to the oven for 5-7 minutes (this will depend on the thickness of your salmon, cook it till it begins to flake with a fork). Uncover and pop under the broiler for about a minute to give a little more color if desired.
